It’s time for us to introduce a new wine: the 2012 Pavillon de Taillefer Saint-Émilion Grand Cru. We’re really, really excited about this one… read on to find out why. This wine will be available in Shanghai and Suzhou as a Limited Edition special from Thursday, 28 January.
Pavillon de Taillefer is an exceptional red wine that serves as the main cuvee of prestigious French wine producers and traders Cellier des Producters. It is classified as a Grand Cru, a regional wine classification that means its grapes are grown in highly respected vineyards. All the work on the vineyards that goes into making the wine is done manually, and the production process is 100% organic, with a selective care taken that results in very low yields.
The wine is then aged for 12 months in oak barrels and, though it can be enjoyed young, has the potential to age and improve for 10 to 15 years. It’s a rich, complex and most of all elegant red wine; subtle, delicate and fruity with jammy notes and hints of violet, blackberry, raspberry and vanilla.
And now a little about the creators of this beautiful bottle. Philippe and Catherine Cohen, the husband and wife that run Cellier des Producters, have spent the past decade developing the company’s Chateau Vieux Taillefer into a successful five hectare vineyard.
Philippe is the son of a passionate wine collector (and Stanford University professor) and a wine collector himself, often travelling around the wine regions of Europe collecting wines and developing close friendships with the continent’s best wineries. Catherine, meanwhile, is head winemaker, having gained a BSc in Oenology and worked under world-renowned winemaker Jean Claude Berrouet for five years, which she credits as giving her the opportunity and technical expertise to excel at making her own wines.
Cellier des Producters has been providing connoisseurs and collectors with luxury wines and sought-after vintages since 1987 and is a company that is just as passionate about sourcing world-class wines as it is about discovering great new wineries. The Cohen family itself has a long history in the world of fine wines and gastronomy that has helped them develop strong, enduring relationships with some of Europe’s greatest winemakers.
